The Theory
One founder, fourteen months in Naples, and 1,142 logged dough batches before we let anyone pay for a slice.
In 2018 Khalid Al Marzooqi sold his share of a branding agency, bought a one-way ticket to Naples, and spent fourteen months as the oldest apprentice at a third-generation pizzeria. He came back with second-degree burns, a notebook, and a theory: great pizza is not a recipe, it's a controlled experiment.
Every batch of dough since day one has a number and a log line — hydration, room temperature, verdict. Batch 0001 was, in the official record, "a frisbee." Batch 0417 got the hydration right. Batch 1142 opened the doors.
In 2023 we took over Warehouse 42 on Alserkal Avenue and craned in Vesuvia — three tonnes of Neapolitan brick with opinions of her own. Sixty seats sit around her. She has never once been off schedule; the same cannot be said of the humans.

2018

2019
First pop-up in a friend's Al Quoz warehouse. The dough is officially logged as "a frisbee." The queue comes back anyway.
2021
Rosso the food truck hits the road. One customer requests pineapple. Rule №1 is written that same night.
2023
Vesuvia arrives from Naples in a crate the size of a studio apartment. Sixty seats are built around her.
2025
The hundredth Saturday masterclass graduates. Around 900 Dubai kitchens now ferment for three days. You're welcome.
