Every loaf on this page rises on the same culture. She has been alive longer than the shop.

  1. 2020

    Born in a home kitchen

    Mixed from stone-milled flour and Rawdah tap water in the quiet spring of 2020. Named for the hour she demands.

  2. 2021

    She moves into the shop

    The first loaves on Prince Sultan Road rise on a culture already a year old. The waiting list follows her.

  3. 2023

    The second mill arrives

    Demand doubles; a second stone mill joins the midnight shift so Fajr never meets flour older than three days.

  4. 2024

    Forty daughters and counting

    Every sourdough-school graduate leaves with a jar of her offspring. We know of forty living on Jeddah counters.

  5. Today

    Fed twice a day

    05:00 and 17:00, same flour, same hands. Miss a feed and the whole week tastes it.

Allergies: the mill runs nightly and flour is in the air — tell us before you order and we will steer you honestly.
