From bloom to tamr
A date is not picked, it is waited for. The palm moves through five stages across the year, and we harvest each variety at the one that suits it best.

Bloom
The spathes split and the palm flowers. Male and female bloom apart — the grower must bring them together.

Pollination
Every crown is climbed and pollinated by hand, strand by strand. No shortcut has ever matched it.

Kimri
Hard, green and sour. We thin the bunches now so the fruit that stays grows full and even.

Rutab
The tip softens to honey and the sugar arrives. Barhi is rushed to market fresh at this very stage.

Tamr
Fully ripe, cured and keeping. This is the date that fills our boxes — dense, dark and slow-sweet.
